Cacao Barry, the leading premium chocolate brand, has announced that its WholeFruit chocolate, made from 100% pure cocoa, is the first-ever chocolate to be Certified Upcycled by the Upcycled Food Association (UFA).

Cacao Barry’s Evocao WholeFruit chocolate was launched a year ago on June 7, 2021, showcasing fresh fruity tastes with no added refined sugars, lecithin and vanilla. Evocao is the first expression of WholeFruit chocolate, with its lively, lemony and tangy taste, complemented by what characterizes Evocao: a tropical fruitiness overflowing with fresh mango, lemon, mandarin, passion fruit and cocoa pulp, an expression of the Dominican Republic and Ecuador. cocoa fruit.

WholeFruit Chocolate has given value to the pulp of the cocoa fruit that was once thrown away by being good for the environment, bringing an additional source of income to farmers and bringing a new fresh and fruity taste to the world of chocolate. Recently, Evocao WholeFruit Chocolate was awarded the 2022 World Food Innovation Award for Best Artisan Product.

“Evocao being Certified Upcycled means a big step in our industry towards a sustainable cocoa culture that will spawn other industries to follow,” said chef Dimitri Fayard, executive chef at Chicago Chocolate Academy. “By using Evocao, I know I’m making the planet a little better.”

“In 2022, upcycling is a giant step in the world of chocolate and an example of good practices that will make all the difference for the good of our planet”, says chef Nicolas Dutertre, head chef at the Académie du chocolat from Montreal.

The Upcycled Certification Program is the world’s first third-party certification program for upcycled food ingredients and products. The certification highlights recycled ingredients and products purchased and made with food surpluses or food by-products from manufacturing that use verifiable supply chains and have a positive impact on the environment.

“Eliminating food waste is the single most effective thing people can do to fight climate change,” says UFA co-founder and CEO Turner Wyatt. “With the launch of Upcycled Certified, reducing food waste becomes much easier. Upcycling is an innovative approach as it is the first consumer product-based solution to food waste, making it highly scalable and cost effective. sustainable.

“This is incredible news for the whole team that has been involved in this project,” said chef Ramon Morató, creative director of Cacao Barry. “WholeFruit chocolate is not just chocolate, it’s a movement and with the commitment of chefs, we are changing the way we understand chocolate. This news is confirmation that the path we have taken is going in the right direction.
